I’m a HUGE breakfast lover. Like so much a breakfast lover that every morning in my zombie-fied state, I roll out of bed, head to the coffee pot and immediately begin thinking about what to make to eat. It’s funny when I think back to high school when the thought of breakfast never even crossed my mind. I’d say things might have changed just a wee bit 😉 I liiiiiive for breakfast now, and for my own breakfast. Weird, right? Going out always sounds so good in theory, but then when it comes down to it that morning, there’s just something about being in the comfort of my own home and being able to eat breakfast just that much faster because its right there in front of me waiting to be made. Wow, if that right there doesn’t scream that I’m a food lover, then I don’t know what does (totally embarrassed right now). I’ve been on an egg kick lately, whether its scrambled, over-easy or on this beautiful avocado, egg and tomato toast. People always laugh at how early I eat lunch in the office, so my goal is to try to eat a healthy, protein-rich breakfast to hold me over till the its-just-barely-afternoon lunchtime of 11:30 a.m. Let’s just say I’m definitely a fan of the five meals a day plan (don’t judge).
You’ve probably seen avocado toast floating around the internet for quite some time now, which totally makes sense…avocados include heart healthy fats and are packed with tons of vitamins and minerals which makes this such a great breakfast treat. Personally, I think I could incorporate avocados into every meal and I would be a happy camper. Then you add your egg and tomato and you’ve got yourself quite a tasty, whole little meal. This avocado, egg and tomato toast recipe tends to be one that I make quite often just because of the simplicity, and not to mention its avo-control delicious!
Hard boiled eggs are so versatile and last such a long time that I try to always have a few in the fridge for a good protein snack or to include in other tasty recipes like this one. This toast is great for brunch, lunch or an afternoon snack, and save the rest of that avocado in the fridge to make it again tomorrow! Anyone up for breakfast for dinner?

- 1/2 avocado
- Salt, to taste
- 2 slices of multigrain or whole wheat toast
- 2 fresh tomato slices
- 1 hard boiled egg, peeled and sliced
- Pepper, to taste
- Fresh basil for garnish
- Mash avocado in small bowl with desired amount of salt.
- Spread onto toast.
- Add tomato slice and hard boiled egg slices.
- Garnish with black pepper and fresh basil.
- Feel free to make your eggs however you like with this...over-easy or scrambled work great too!
