It’s a special time of year, one that I make sure I have at least $9-$12 cash in my wallet at all times. Ya know, just in case. Then it finally happens…you spot the Girl Scouts! Deep down, I know that I can probably buy regular cookies at the grocery store throughout the rest of the year that would be just as tasty, but it’s just not the same. 

Anyway, cookie season is over. 😢 I have one more box of Thin Mints in my freezer that I’m saving for an in-case-of-emergency type situation. I only bought one box of Samoas this year, because I really wasn’t trying to gain 5 lbs just from cookie consumption, and they went fast. Apparently my husband likes those too. 🤷‍♀️

In trying to seek out more coconut goodness, I decided to try it in oatmeal form. Full disclosure up front: this oatmeal is not going to be quite the same as eating those delicious little cookies. However, it is a fun (and healthy in comparison) twist on overnight oats that will be reminiscent of your favorite cookie! Samoa overnight oats are great for a few reasons: it’s a breakfast you can prepare ahead of time, you pretty much can’t mess them up, and they’re great when its 90 degrees outside (about 6 months of the year here)!

Samoa Overnight Oats
Serves 1
An overnight oatmeal recipe that's super easy to prepare and reminiscent of your favorite Girl Scout cookie!

Ingredients
  1. 2 tbsp sweetened coconut flakes
  2. 1/2 cup dry old fashioned rolled oats
  3. Dash cinnamon
  4. Dash salt
  5. 1/2 oz (1/8 cup) chopped pecans
  6. 2 tsp mini chocolate chips
  7. 2/3 cup nonfat milk
Using a container with a capacity of approximately 1.5-2 cups, layer the ingredients in the following order
  1. Sweetened coconut flakes- 2 tbsp
  2. Dry old fashioned rolled oats- 1/2 cup
  3. Dash cinnamon
  4. Dash salt
  5. Chopped pecans- 1/2 oz
  6. Mini chocolate chips- 2 tsp
  7. Milk- 2/3 cup
  8. Cover and allow to soak covered in the refrigerator for approximately 10 hours. Stir & enjoy!
